Monday Menu Plan ~ February 20, 2012
After a particularly difficult week with both Bean and I not feeling our best, I’ve been extremely gratified to get the kitchen clean this weekend, as well as plan a menu and finally get signed up for our Mama Earth Organics order again!
The husband was super helpful with the kitchen too – he took the initiative to clean the nastiness out of the fridge (mainly leftovers that never got eaten :p), and filled the dishwasher several times (I wasn’t exaggerating about it being a difficult week!).
Of course, it’s been quite helpful to have an extra day off, too…why can’t every weekend be a 3-day weekend??
At any rate, here’s the plan for this week. Thanks to some organizational help from Pinterest, I’m quite excited about the breakfasts I’ve got planned. We’re also going to be making more of an effort to get things done at night that we often find ourselves scrambling to do in the morning to make sure we have time for breakfast goodness.

Monday:

- Lunch – Bacon, Eggs & Hashbrowns
- Dinner – French Onion Soup (recipe from Wholesome Comfort by Modern Alternative Mama)
Tuesday:
- Breakfast – Eggs & Greens
- Lunch – Keeping it simple – Turkey Sandwich & Cottage Cheese
- Dinner – Salmon & Sauteed Spinach
Wednesday:
- Breakfast – Eggs in a Nest with Squash
- Lunch – Turkey Sandwich & Cottage Cheese
- Dinner – Crock Pot Chicken
Thursday:
- Breakfast – Bacon, Egg, Avocado & Tomato Salad
- Lunch – Turkey Sandwich & Cottage Cheese
- Dinner – Pork Chops & Roasted Brussels Sprouts (you HAVE to try this recipe – it is SO good!)
Friday:
- Breakfast – Breakfast Quinoa
- Lunch – Turkey Sandwich & Cottage Cheese
- Dinner – Mac – n – Cheese – n – Cauliflower – n – Artichokes
Saturday:
- Breakfast – Eggs w/Spicy Black Beans & Avocado
- Lunch – TBD (To Be Determined)
- Dinner – TBD
Sunday:
- Breakfast – Sweet Potato Hash w/Sausage & Eggs
- Lunch – TBD
- Dinner – TBD
I don’t like to plan as far ahead as the weekend for lunches and dinners because they end up being so unpredictable and if I shop for them at the beginning of the week, stuff ends up going bad. We’re also planning a visit to a new (to us) butcher on the weekend so hoping I can get some fun stuff but not yet sure what it will be.
Part of our plan for February has been to make most of our meals at home and go for a walk every day, which I’ve written more about in a guest post at Little Green Blog that I hope you’ll have the opportunity to visit. Though we haven’t been successful every day we do continue to strive for those goals, and the days we make them happen feel like such an accomplishment.
We also managed to figure out one more ‘tip’ that makes cooking dinner after getting home from work much easier – appetizers! I know it sounds like something of a no brainer but I can’t count how many times I’ve planned a meal, realized it would actually take time to cook, then stopped for something on the way home because I was so hungry after a long day.
We started picking up snacky things like cheese and olives and salad fixings that can be ready almost immediately and are so helpful in giving me the energy and willingness I need to cook something. Just thought I would share in case anyone else has gone through similar struggles.
