Monday Meal Plan – January 9
Boy has it been awhile since I’ve done one of these!
Over the past 5 months or so (has it really been that long? :p) I have hardly made a single meal plan – and it has really shown. We have been eating total crap, going out way too often, and basically breaking every goal I have toward consuming real food and healthy living.
(Though there have been a few highlights – we’ve been making a lot of our own butter, made all ‘real food’ holiday baking this year, and have been getting back into doing freezer meals over the past few weeks).
And it’s a process. And I have to keep trying – I want to keep trying. So this week, I’m making a meal plan…and we’ll see where it goes from here…
Monday
- Breakfast: Scrambled Eggs w/Cheese, Avocado, Sour Cream & Tabasco
- Lunch: Tortilla Soup
- Dinner: Pork Chops & Asparagus
Tuesday
- Breakfast: Boiled Eggs
- Lunch: Pork Chop & Spinach Salad
- Dinner: Hamburgers topped w/Guacamole & Broccoli
Wednesday
- Breakfast: Scrambled Eggs w/Cheese, Avocado, Sour Cream & Tabasco
- Lunch: Pork Chop & Spinach Salad
- Dinner: Turkey Soup
Thursday
- Breakfast: Boiled Eggs
- Lunch: Hamburger w/Guacamole, Baby Carrots
- Dinner: Warm Kale & Potatoes
Friday
- Breakfast: Scrambled Eggs w/Cheese, Avocado, Sour Cream & Tabasco
- Lunch: Hamburger w/Guacamole, Baby Carrots
- Dinner: Sushi
Saturday
- Breakfast: Omelet w/Mushrooms, Onion, Bacon, Goat Cheese
- Lunch: Probably won’t be hungry!
- Dinner: Roast Chicken & Veggies
Sunday
- Breakfast: Mini Broccoli & Cheese Crustless Quiches
- Lunch: TBD
- Dinner: Carnitas
A little commentary…
I know there’s not much variety, but that’s because I’m focusing on 2 things in particular with this meal plan – easy, and fast.
I love to cook, but I don’t feel like cooking (or waiting!) when I get home from work, and I never feel like making lunch in the mornings either. So many of these meals are either super fast and easy or make-ahead – it’s pretty much the only way I’m going to avoid the fast food trap.
I am planning one meal out (or take-out, really) for Friday night – I’m hoping it’ll help to have something to look forward to and think, “We can’t go tonight because we’re going to on Friday”. We’ll see how it actually works though.
You may notice that this is pretty much a grain-free menu – something I’m still struggling to implement full time. Remember when I said if grains were a person, I’d marry him (or her – I wouldn’t be picky)? Well, let’s just say it’s been very tough to keep my food philosophy in line with actual action when it comes to those grains. But again, it’s a process, and we’re trying.
Oh, and I still need to figure out snacks!
In the meantime, it’s a HUGE relief to have finally written a meal plan again!

Thank you! I've written myself a list of chores to do daily, and Monday is meal plan day, so I can shop on Tuesday while #1 is in preschool.
This is something that I need to do to feel organized. I HATE making dinner, and if I'm organized it makes it a little better
