Menu Plan Monday ~ January 23, 2011
Just a quickie of a menu plan this week (it helps motivate me when I post for all the world to see
) – and hopefully provides you with a bit of idea inspiration too!
I do want to note that several of my recipes this week are from the new recipe eBook recently released by Modern Alternative Mama called Wholesome Comfort, which is full of real food/comfort food yumminess (perfect for winter!) and will be followed with a full review and giveaway near the end of February – so keep an eye out!
In the meantime, here’s the plan:
Monday
- Breakfast: Eggs & Bacon
- Lunch: Leftover Dumplings (from Chinese New Year – thanks MIL!)
- Dinner: Ham & Bean Soup
Tuesday
- Breakfast: Scrambled Eggs
- Lunch: Ham & Bean Soup
- Dinner: Meatloaf
Wednesday
- Breakfast: Eggs w/Avocado & Sour Cream
- Lunch: Meatloaf
- Dinner: Tuna Casserole
Thursday
- Breakfast: Scrambled Eggs
- Lunch: Tuna Casserole
- Dinner: Stir Fry
Friday
- Breakfast: Quinoa w/Blueberries, Agave Syrup & Pistachios (from the Organic Family Cookbook)
- Lunch: Chicken Tortilla Soup
- Dinner: Mini Crustless Broccoli & Cheese Quiches
Saturday
- Breakfast: Fruit, Cheese & Yoghurt with Honey
- Lunch: TBD
- Dinner: French Onion Soup
Sunday: TBD
You’ll notice lots of soups this week - I’ve spent much of the weekend making chicken and beef stock to be prepared for all that. I’m making bread today and will probably do at least one more loaf; it’s a bit of a clear out the pantry/try to save money where we can as well as a recipe-testing adventure.
I’ve also been snacking on a lot of yoghurt and kombucha and plan to continue this week – I’ve been feeling a lot better in general since I’ve started incorporating more of those into my daily diet. I do think one of my very soon upcoming projects is to start brewing my own kombucha – that stuff gets expensive (though it has been on sale for the past several days so we’ve been stocking up).
I must say I’m very intrigued to see how some of these real food/comfort foods turn out (especially the tuna casserole – one of my ‘past life’ favourites that I’ve stopped making since we try to avoid canned food as much as possible). Haha I wondered if I should expand on that…it means To Be Determined – weekends are so up in the air for us that I find it difficult to plan meals for them most of the time…
