Monday Meal Plan – Getting Back on the Wagon
What a crazy two weeks it has been…
As I sit down to (finally) write and reflect once again, I’m realizing how stressed and overwhelmed I’ve felt over the past few weeks – not that they’ve been bad – it’s just that we decided a couple weeks ago that I would take Bean and fly to the US to surprise my mom for her birthday, and in all the getting ready to go, flying, PMS :p, taking care of her without the hubs for a week…it was pretty crazy!
One thing that did help me out so much was the amazing guest post contributions I was honored to publish last week from some of my very favorite bloggers: Doula Rachel, The Cloth Diapering Mama, A Little Bit of All of It, State of the Heart Parenting, TouchstoneZ and Let’s Take the Metro. I would love for you to go check them out if you haven’t yet gotten the chance – they are so full of humor, wisdom and just all around awesomeness!
As for myself, I totally fell off the good food wagon!
Though I’ve gotten much better than I used to be, there’s just something about feeling overwhelmed that makes all my good food intentions fly right out the window. During the first 2 weeks of May I actually lost over 7 pounds for the Sparkle Mama’s weight loss challenge.
During the last 2 weeks of May…I gained most of it back.
I’m not beating myself up though! I’ve seen that I CAN do it, which was a huge inspiration to me and something I’m very thankful to Katie of The Sparkle Mama for initiating! And I’m getting back on track for June – with a plan to go grain free the entire month.
Here’s the thing. I know I will probably mess up – I’ve been a lover of grains for my entire life. I’ve been a lover of junk food for my entire life!
But I’m doing my best now to take it one day at a time, and hopefully begin enough good habits that a major event like a vacation won’t throw me off so much in the future. As crappy as I’ve been feeling after consuming so much un-healthful food over the past few weeks, I don’t think it’s going to be that hard!
With that, here’s this week’s meal plan:
Breakfast:
- Green Smoothie
- Eggs & Fruit
- Green Smoothie
- Eggs & Fruit
- Green Smoothie
- Eggs, bacon, hashbrowns
- Eggs & bacon
Lunch:
- Cottage Cheese & Sweet potato fries
- Veggies & Hummus
- Lentils
- Primal Chicken Nuggets
- Cottage Cheese & Veggies
Dinner:
- Stir Fry w/tofu
- Primal Nuggets & veggies
- Spinach Salad w/boiled eggs, goat cheese and lots of veggies
- Burrito Bowls
- Eggplant mini pizzas
- Pork Chops & Asparagus
- Steak & Collard Greens
Snacks:
- Fruits & Veggies
- Cheese
- Homemade trail mix
- Leftovers
Just a note on trail mix – I usually don’t like it because there always seems to be one or two components of a mix that doesn’t sound good to me, so I finally started making my own. It’s pretty fun – I just go to the bulk food store and pick out whatever looks good to me.
The one I made this time is really good – it has walnuts, almond slivers, dried blueberries, pumpkin seeds, fennel seeds, and dark chocolate chips. I know I shouldn’t be eating sugar, but I made an executive decision to allow that one indulgence.

Your slip ups are normal…maybe if you can get your family on board with being more crunchy than you can be uber-healthy together like my mom and me…we are even more GREEN as a team. The trail mix sounds yummy…dark chocolate is an anti-oxidant so you really weren't doing too bad!!
